On these cold autumn mornings what better way to start your day than with some porridge oats but with a twist. Try these baked cherry oats with caramelised walnuts, these nutritious oats are sweetened with maple syrup and spiced with cinnamon and nutmeg. If its quick oats your after these are not the ones for you, but if you're after decadent oats served with yoghurt or fresh cream , then this is the breakfast for you
Ingredients –
· 175g oats
· 2 tsp ground cinnamon
· 1/4 tsp ground nutmeg
· 1 tsp baking powder
· 1/2 tsp salt
· 330 plant milk
· 70g maple syrup
· 4tbs peanut butter
· 1 tsp vanilla extract
· 2 tbsp melted plant butter
· 250g frozen cherries
· 60g walnut pieces
· 20g dark brown sugar
· 1/2 tbsp melted plant butter
Method –
1. Pre heat your oven to 180c fan, gas mark 6.
2. In a large bowl add your oats, cinnamon, nutmeg, baking powder, salt all the dry stuff and give it all a good stir.
3. Next get all the wet stuff and mix that together too, so your plant milk, maple syrup, peanut butter, vanilla extract and your melted butter and mix it all together.
4. Now we need an oven proof dish to cook it in, about 20cm x 20cm, any bigger and it will be too thin, we want a little bit of depth.
5. Take half of the 250g of cherries and put them in the bottom of the dish, spread them out evenly, next take your dry mix of oats and spices and sprinkle this all over the cherries and now add all your wet mix all over the oats, making sure all the oats are covered.
6. Now take the remaining cherries and add them to the top of the dish ensuring an even spread.
7. Pop into the preheated oven for 40 minutes (we come back to this near the end of the 40 mins)
8. While that's cooking take a frying pan on a medium heat and add the walnuts, brown sugar and 1/2 tbsp of melted butter and stir around the pan for a few minutes, the butter will melt, the sugar will start to melt too and coat the walnuts. approximately 8 mins from the end of baking the oats sprinkle your walnuts over the oats and pop back into the oven for the last few minutes.
9. Now 40 minutes are up and we can take the oats out of the oven and serve warm with a little yoghurt or as I like a good drizzle of plant based cream..... Enjoy
