Banana Muffins

Banana Muffins

Ingredients:
Bananas (Approx 9 Bananas) (720g)
Oat Flakes: ~4 cups (350g)
Dark Chocolate Drops: ~1 cup (180g)
Coconut Oil: 1 ¾ tablespoons (24g)
Vanilla Essence: 2 tablespoons (24g)
Cider Vinegar: 1 ¾ tablespoon (12g)
Baking Powder: 5 ¼ teaspoons (24g)
Water: 8 tablespoons (120g)
Salt: ½ teaspoon (3g)
Instructions:
1. Preheat the Oven: Preheat your oven to 190°C. Line a muffin tray lightly greased with
coconut oil.
2. Prepare the Batter:
? In a large mixing bowl, mash the ripe bananas until smooth.
? Add the melted coconut oil, vanilla essence, cider vinegar, and water to the
mashed bananas. Stir well to combine.
? In a separate bowl, mix together the oat flakes, dark chocolate drops, baking
powder, and salt.
? Gradually fold the dry ingredients into the wet mixture until just combined.
3. Fill the Muffin Tin:
? Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
4. Bake: Place the muffin tin in the preheated oven and bake for 21 minutes, or until a
toothpick inserted into the center of a muffin comes out clean.
5. Cool: Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire
rack to cool completely.
