INGREDIENTS:
320 Gr Mezze Maniche Pasta
1 Eggplant
1 Red Pepper
1 Yellow Pepper
2 Shallots
2 Big Spoon of Flaked Almonds
Fresh Oregano (dried is OK)
Salt
Olive Oil, Salt
INSTRUCTIONS:
Toast the Almonds in a hot pan without any oil.
Wash the vegetables, dice the vegetables to the same size; over medium heat, add oil to the
pan and cook the Eggplant, onion and peppers; once ready, add the fresh oregano and salt.
Have the pasta cooking and once it is al dente, strain it and add it to the pan with all the
vegetables.
Add some olive oil as you are tossing it, divide in 4 plates and finish it with some
Stracciatella on top of each plate.
