Chicken, Chorizo and Nduja Pasta

Ingredients:
4 chicken breasts
I/2 ring of chorizo diced
Nduja (as much as you like - I used 30g
3 crushed garlic cloves
1-2 Leeks sliced
1 punnet of mushrooms sliced
1/2 chicken stock pot
125 mls light or double cream
3 tbsp Parmesan (more if you prefer)
Method:
* Fry off the chicken in a little oil
* Add in the garlic (I also seasoned with lemon pepper)
* Add in the mushrooms and leeks and fry off for 5 mins
* Schoosh it all to one side and add the Nduja & chorizo. and fry off for 1-2 mins then mix everything together
* Add 200 mls boiling water and drop in the stock pot
* Let it dissolve and add the cream
* Stir it all in and then add the Parmesan
* Simmer for 5 mins until thickened
* Then throw in your pasta of choice (cooked) and stir
* Season with black pepper and serve
