INGREDIENTS:
250g free range pork mince
250g good quality turkey mince
1 apple diced small
50g fresh breadcrumbs
2 eggs
2 tbsp chopped shallots
1 tbsp fresh chopped sage and oregano
1 clove garlic crushed
Small can 400g chopped tomatoes with herbs or garlic
1 bayleaf
100g chorizo diced up
METHOD:
1). In a large bowl mix the pork and turkey mince well..add a tbsp of minced shallot and garlic,
diced apple, breadcrumbs, eggs and the fresh herbs and mix well. Season with a pinch of salt
and pepper.
2). To prepare the sauce cook the chorizo first to release the oils and flavours ..add in the
shallots In a pot slowly and add the garlic.
3). Cook gently for 3 minutes and Add in the can of chopped tomatoes and bay leaf and turn
down the heat and cook for 10 mins slowly bubbling away.. add chopped oregano to finish.
4). To cook the meat balls heat up a large non stick frying pan and fry off the meatballs in a drop
of vegetable oil to get a nice colour all over and pop into the pre heated oven @ 190 c ( if the
pan is ovenproof if not transfer to a oven proof dish ) for approx 8 – 10 mins until cooked
through.
5). Remove from the oven and toss them in the tomato sauce and serve immediately.
