Southern Style Chicken Burger with North Carolina Cabbage Slaw
INGREDIENTS:
3 Chicken Breasts
Buttermilk
Salt
1 Teaspoon Sweet Paprika
To marinate the chicken breast, mix the buttermilk, salt and sweet paprika; cut in half the breast of chicken (lengthwise) and mix in the buttermilk.
Would be better to leave this overnight in the fridge.
DUSTING FLOUR:
INGREDIENTS:
100 gr Plain Flour
100 gr Corn Flour
2/3 Dessert Spoon Sweet Paprika
2/3 Dessert Spoon Smoked Paprika
2/3 Dessert Spoon Garlic Powder
2/3 Spoon White Pepper
2/3 Spoon Cajun
Mix all in a bowl.
CAROLINA BBQ SAUCE
125 gr apple cider vinegar
125 gr Ketchup
1 spoon brown sugar
1 pinch of salt
½ teaspoon chilli flakes
½ teaspoon black pepper
Mix All.
½ white cabbage and ½ red cabbage
Start the night before by mixing buttermilk, paprika and salt and marinate the chicken overnight.
At the same time, with the use of a mandolin, slice the cabbage, put it in a colander and season it with abundant salt; it will help to drain all the bitter water.
Mix together all ingredients for the dusting flour and set aside.
Mix all for the Carolina BBQ sauce and set aside.
Was under fresh cold water the cabbage, to get rid of all the salt; dry it a bit in a kitchen towel and dress with the Carolina BBQ Sauce.
Using a fryer, remove from the buttermilk marination the chicken, and still wet, pass in the dusting flour on all sides.
Drop in the hot oil and let it cook for a couple of minutes, turning it around.
While cooking, toast you burger bun, add some of the Carolina BBQ sauce on it, add the cooked chicken, top it up with the Cabbage and eat away!
