Slice and Bake Pride Cookies
INGREDIENTS:
 
400g cream flour
½ tsp baking powder 
¼ tsp fine sea salt 
225g salted, Irish butter (room temperature) 
225g caster sugar 
2 large free range eggs
5g / 1 tsp vanilla extract paste or gel food colouring (the liquid won’t be vibrant enough)
Choose 6 colours of hundreds and thousands
 
METHOD:
 
1. In a large bowl, beat the butter and sugar together until light and fluffy. Scrape down the bowl and beat again to make sure the texture is consistent. Add in the eggs, one at a time, beating after each addition. Scrape down the bowl, add in the vanilla extract and beat together. 
 
2, In a separate bowl, sieve the flour, baking powder and salt together. Add this mixture to your first bowl of ingredients and beat slowly until combined. Divide the cookie dough into three equal portions. 
 
3. Wrap two of these portions in cling film and refrigerate. The cookie dough that’s left will be coloured to create a rainbow heart. Divide this dough into 6 equal portions, colouring each portion with a different gel. 
 
4. Lay out a piece of parchment paper and crumble the various coloured cookie dough pieces and spreading the pieces our randomly, so the colours are varied. Lay a second piece of parchment on top and roll the cookie dough until there are no gaps, and the dough is about 1.5 cm thick. Chill in the fridge for at least an hour. 
 
5. Using a cookie cutter about 3 cm in diameter (I like using a heart), cut out as many pieces of the multi-coloured cookie dough as you can. Stack all of the shapes together to create a tower. Chill in the freezer for at least 30 minutes. Remove the plain cookie dough pieces from the fridge and mold it around the stack of frozen hearts, to create a log of cookie dough with the hearts hidden in the center.
 
6. Roll the cookie log in Hundreds and Thousands, to cover the outside of the log. Wrap in cling film and chill in the freezer for 1 hour. Line your baking trays with parchment paper. Preheat the oven to 160° C / 150° C fan. Slice the cookie dough log into rounds that are 1 cm in thickness. 
 
7. Lay the cookies on the lined trays, leaving some space in between (the cookies won’t spread much but they will puff up a little. Make sure they don’t touch each other) Bake the cookies for 12 minutes, or until slightly golden. Cool and enjoy! Happy Pride!
