Sausage Rolls with Chilli Jam

Sausage Rolls with Chilli Jam
Ingredients 
 
* 400g Lean Pork Mince
* 1 tsp dried sage
* 1 tsp mixed herbs
* 1/2 tsp white pepper
* 40g cheddar cheese (optional)
* 1 pack ready to roll puff pastry 
* 1 egg, beaten 
* Salt and pepper to taste 
To garnish
* Sesame seeds or Nigella Seeds
Method:
 
•Pop the mince in a bowl and add the herbs, salt and pepper (& cheese) and give it a good mix ? 
Next, roll out the pastry and with the long edge facing you  spoon the sausage mixture over the top, forming it into an even log shape. 
Brush some of the beaten egg over the exposed pastry, then tightly roll the edge closest to you up and over the filling to enclose it, cut off any excess and press the edges closed with a fork or tuck under for a more round look. You should have one long sausage roll
Pop it on a baking tray and brush with the beaten egg to give it a nice glazed finish when cooked
Sprinkle the sesame seeds all over the top , then make Make large cuts across the top of the sausage roll
Pop in to a preheated oven at 200° and Bake for 35-40 mins until the pastry is golden and the sausage filling is cooked through. Leave to cool slightly
Slice and serve with the chilli jam for a little spicy kick
The Chilli Jam:
 
9-10 long red fresh chillies
2-3 cloves garlic
1 tbsp soy sauce
500g sugar
250 mls apple cider vinegar
Method:
 
•Pop the chillies & garlic in a blender and get them nice and finely blended
•Add the vinegar and sugar in a sauce pan - heat and bring them to a gentle boil until the sugar is fully dissolved
•Then add in the chillies, garlic & soy and continue to boil for 6-7 minutes
•Take it off the heat and let it cool
•This can then be stored in a sterilised jar with a lid to enjoy !
