Ingredients
Crispy Beef
· 375g Lean Stir Fry Beef
· 20g Corn Flour with White Pepper and Salt
Veg Mix
· 1 Green Pepper
· 1 Onion
· 3 Scallions
· 2 Cloves of Garlic
· Boil in the Bag Rice/Microwave Rice
Black Sauce
· 2 tbsp Ketchup
· 2 tbsp Sweet Chilli Sauce
· 1 tbsp White Rice Vinegar
· 2 tbsp Soy Sauce
· Splash of water to loosen
Garnished with
· Sliced Green Scallion Ends & Red Chilli
· 10g Sesame Seeds
Method
1. Season the beef with salt and pepper. Coat in the corn flour and toss until evenly covered.
2. Spray generously with spray oil and cook in the air fryer at 200° for about 15 to 20 minutes, shaking regularly until crispy and cooked through (depending on how well done you like it).
3. Slice the pepper and onion into thin slices and finely chop the garlic.
4. Soften the Pepper and Onion on a pan in a little spray oil and add the garlic. Cook over a medium heat until veg is softened but still has a nice crunch.
5. For the sauce in a bowl add all of the ingredients and mix well.
6. Add the sauce to the cooked veg and allow it to simmer over a high medium heat until it begins to thicken a little.
7. Finally add the crispy cooked beef to the sauce and veg and serve on a bed of Rice. It's lovely with noodles too.
8. I garnish with some thinly sliced Scallion and Chilli and a sprinkle of sesame seeds.
