Cajun Chicken & Bacon Pasta

INGREDIENTS:
200g Penne Pasta
2 Chicken Breasts
20 g Butter
1/2 White Onion finely diced
3 garlic Cloves chopped
3 Tbsp Cajun Spice
1 Tbsp Tomato Paste
150ml Chicken Stock
200 ml Double Cream
100 g Parmesan Cheese n extra for topping
20 g Chopped Parsley
30 g / 4 Smoked Rashers Roughly Chopped
METHOD:
1. Cook pasta in salted boiling water for 15/20 mins until cooked , drain but keep some pasta water for later and set aside.
2. Cut Chicken into bite size pieces.
3. Put chicken into a bowl or freezer bag and add 2tbsp of Cajun spice and 1tbsp of oil and mix till combined.
4. Add butter and oil to a large pan over medium heat , once butter has melted add in chicken and cook for a few minutes until browned all over.
5. Add Garlic and cook for 2 mins then add Tomato Paste , 1 Tbsp of Cajun spice and Chopped cooked Smoked Bacon and stir well.
6. Pour in chicken stock and double cream and bring to the boil, simmer until sauce thickens.
7. Drain Pasta and add to chicken sauce and stir well add pasta water if it is too thick.
8. Add grated Parmesan and Chopped parsley and stir well.
9. Season with salt n pepper to taste.
10. Freshly grated parmesan cheese and cracked black pepper sprinkled on top to finish.
11. Serve with garlic bread and rocket leaf salad.
