INGREDIENTS:
375g packet ready-rolled puff pastry
340g sausages
1 eating apple
1 egg beaten
2 tablespoons plain flour
METHOD:
1). Slit the sausage skins with a knife and squeeze the sausage meat into a bowl. Peel and grate the apple. Mix together.
2). Carefully unroll the puff pastry and fold it in half widthways. Cut along the seam and fold in half again and cut along that seam. This will give you 4 pieces of pastry.
3). Sprinkle some flour on the work surface. Take one piece of pastry and place a quarter of the sausage meat in the middle of the pastry. Eggwash both edges and tightly roll the pastry over the sausage meat.
4). Use a fork to press the two pieces together. Trim to neaten the edge. Cut into 8 equal portions, then place it onto a lined baking tray. Then repeat this step with the remaining pastry and sausage meat. Place in the fridge for 20 minutes.
5). Brush each sausage roll with egg wash and bake in a preheated oven for 20-25 minutes until the pastry is golden brown and the sausage meat is fully cooked. Once ready leave on the tray to cool for a few minutes then place onto a wire rack as this will stop the steam from making the bottom of the pastry soggy.
6). Eat hot or cold and serve with raw veg sticks and sweet red pepper jam.
TIP: These can be made in advance and kept in an airtight container in the freezer for up to a month.
