For The Sauce
250ml Ketchup
100ml Craft Beer – Drink The Rest
4 Tbsp Brown Sugar
2 Tbsp Rub
1 Tbsp American Mustard
2 Tbsp Cider Vinegar
1 Orange – Juice And Zest
Method
Preheat oven 180?c
In a deep oven tray add all the marinade ingredients and whisk together.
Grab your pork ribs and place into the marinade. Set this aside to marinade overnight in the fridge or a couple hours on the countertop will do perfect.
Let’s make the rub first, place all the rub ingredients into a bowl and toss together. Set aside until needed.
Now for the sauce, place all the sauce ingredients into a saucepan on a medium heat and bring to a simmer while whisking. Simmer for 5 minutes then remove from the heat. Set aside until needed.
Remove the ribs from the marinade, path them dry with kitchen paper and generously sprinkle with the rub all over.
Place on a tinfoil lined tray, pop into the oven and reduce the heat to 160?and cook for 1.5 hours.
Remove from the oven, brush with the BBQ sauce and wrap up tightly in tinfoil. Return to the oven for 45 minutes.
Remove from the oven allow to rest for 10 minutes. The ribs are cooked when the meat is soft and falls off the bones with a little pull.
Open the ribs carefully and cut into 3 rib thick pieces, stack them all up on a sharing board drizzle with more sauce & rub.
Now get your hands dirty and get stuck in. I always serve these ribs with a potato salad with some homemade pickles!
