1). Put the flour, sugar and butter into a bowl. Rub together wit your finger tips until it resembles breadcrumbs. You can also do this in a food processor which is much faster, for about 10 seconds.
2). Crack the egg and lightly beat it. Add in the milk. Pour into the dry mix, keeping back 2 tbsp to brush over the top of the scones, Use a fork to bring the mix to a soft dough.
3). Turn out onto a lightly floured surface and pat down with your hand or roll out with a rolling pin.
4). Then use a 2” cutter or knife to cut out 8-10 scones. Place onto a baking tray.
5). Brush egg wash over the tops of the scones.
6). Bake in a preheated oven for 12 - 15 minutes until golden brown.
7). You can add in dry fruit, frozen berries, chopped apple or chocolate chips.
8). You can make the scones savoury by leaving out the sugar and adding in grated cheese, chopped onions, chopped olives, pesto or bacon.
