Suzie Lee's Easy Beef Mince Stew
Ingredients
500g beef mince 1 large onion diced 4 carrots peeled and chopped 6 potatoes peeled and chopped 1 chicken stock cube Water Veg oil Salt and pepper Milk
Method
1. In a large pot add a tbsp of veg oil and fry off the onions until softened for a couple of minutes
2. Then add in the beef mince until browned for a couple of minutes, don’t break up the bits of mince too much
3. Then add in the carrots and potatoes
4. Crumble in the stock cube
5. Add enough water so that the ingredients above the water in the pot can be seen by about a centimetre
6. Let this simmer for about 30 min until everything is cooked
7. Season with salt and pepper, if you like it thicker let it simmer for longer or if you like it thinner in texture add more stock
8. Finally finish with a splash of milk and mix everything through
9. Enjoy
