Sarah Butler's 5 Hidden Veg Italian Chicken Pasta
Serves 4
Ingredients:
For casserole pot:
- 3 chicken breasts
- 8 cherry tomatoes halved
- 1 red pepper quartered
- 1 celery stick cubed
- 1 small red onion roughly chopped
- 3 cloves garlic flattened
- Pinch chili seeds (if you like a little hot)
- Handful of fresh basil & parsley
- 20g melted butter
- Dash olive oil
- Salt and pepper
To make sauce:
- 1 tbsp tomato puree
- 350ml chicken stock
- handful fresh basil & parsley
Chicken marinade:
- 1 tbsp dried oregano
- 1 tbsp paprika
- 1 tbsp tomato puree1 clove crushed garlic
- 2 tbsp olive oil
- Salt & pepper
To garnish:
- 50g grated parmesan
- Chopped basil
Additional:
Method:
- Arrange tomatoes, pepper, celery, onion, garlic, chili, basil, parsley and salt & pepper on base of dish
- Combine all marinade ingredients and coat chicken well
- Plate chicken on top of veg
- Cover and oven roast at 180 fan for 45 min
- Once cooked, remove chicken breasts and cut into thin strips
- Add tomato puree, stock and fresh basil & parsley to remaining veg in dish and blitz to a fine sauce
- If using pasta, add cooked pasta to sauce and combine well.
- Add grated parmesan to sauce and season on to taste.
- Plate pasta and sauce first
- Top with sliced chicken
- Garnish with parmesan and basil to finish
- Enjoy!
Top Tip: Add a splash of fresh cream to sauce before blitzing for a creamy alternative.
Also tastes great with spinach leaves added at end of cooking.
