5 Hidden Veg Italian Chicken Pasta

Sarah Butler's 5 Hidden Veg Italian Chicken Pasta

Serves 4

Ingredients: 

  • 200g pasta of choice 

For casserole pot: 

  • 3 chicken breasts 
  • 8 cherry tomatoes halved 
  • 1 red pepper quartered 
  • 1 celery stick cubed 
  • 1 small red onion roughly chopped 
  • 3 cloves garlic flattened 
  • Pinch chili seeds (if you like a little hot) 
  • Handful of fresh basil & parsley 
  • 20g melted butter 
  • Dash olive oil 
  • Salt and pepper 

To make sauce: 

  • 1 tbsp tomato puree 
  • 350ml chicken stock 
  • handful fresh basil & parsley 

Chicken marinade: 

  • 1 tbsp dried oregano 
  • 1 tbsp paprika 
  • 1 tbsp tomato puree1 clove crushed garlic 
  • 2 tbsp olive oil 
  • Salt & pepper 

To garnish: 

  • 50g grated parmesan 
  • Chopped basil 

Additional: 

  • Cooked pasta or wedges

Method: 

  1. Arrange tomatoes, pepper, celery, onion, garlic, chili, basil, parsley and salt & pepper on base of dish 
  2. Combine all marinade ingredients and coat chicken well 
  3. Plate chicken on top of veg 
  4. Cover and oven roast at 180 fan for 45 min 
  5. Once cooked, remove chicken breasts and cut into thin strips 
  6. Add tomato puree, stock and fresh basil & parsley to remaining veg in dish and blitz to a fine sauce 
  7. If using pasta, add cooked pasta to sauce and combine well. 
  8. Add grated parmesan to sauce and season on to taste. 
  9. Plate pasta and sauce first 
  10. Top with sliced chicken 
  11. Garnish with parmesan and basil to finish 
  12. Enjoy! 

Top Tip: Add a splash of fresh cream to sauce before blitzing for a creamy alternative. 

Also tastes great with spinach leaves added at end of cooking.
