INGREDIENTS
4 eggs
2 ripe plantains
Salt
½ teaspoon curry
½ teaspoon seasoning (optional)
Sunflower oil or any oil of your choice
1 onion
1 bell pepper
1 sweet pepper
2 fresh tomatoes
METHOD:
1). Peel and slice the plantain, then a pinch of salt.
2). Heat the oil in a frying pan, add the plantain and fry at a medium heat.
3).Fry for approx. five minutes until browned, then flip to the other side and repeat.
4). Crack the eggs in a bowl, whisk well and add a pinch salt.
5). Wash the onion, fresh pepper and fresh tomatoes, then fry in a pan with oil.
6). Add seasoning, curry, and thyme (optional).
8). Fry for one minute, then add the whisked eggs. Mix everything together.
9). Serve the fried plantain and egg sauce.
