INGREDIENTS
-2 free-range chicken breasts
-handful of red grapes
-handful of rocket leaves
-1 tbsp mayonnaise
-1 tsp curry powder
-3 whole meal wraps
METHOD
Turn down the heat and let the chicken cook for 12 - 15 minutes. Check to see if it's cooked by making sure it's white all the way through when you cut into it.
Take the chicken out of the water and let it cool down.
While the chicken is cooling, rinse the grapes and chop them into 4.
Bunch the rocket together and cut it up really small.
When the chicken is cold, chop it into small pieces and throw it into a largish mixing bowl.
Add the rocket and grapes, the mayonnaise, and the curry powder. Give everything a good mix. Add more mayonnaise if needed.
Take your wraps and spread a couple of spoonfulls of the mixture into the middle.
Roll them up and cut them in half. Pop into your school lunchbox or reusable sandwich bag. They'll keep you going all day in school!
