BBQ Chicken and pepper kebab, garlic mayo and tomato salad
Ingredients
Chicken Kebab
4 chicken breasts diced
2 peppers diced
2 red onions diced
1 tea spoons – smoked paprika, cumin, coriander
2 tbs Chopped mint &
coriander
Splash olive oil
To make the kebabs, put the ingredients into a bowl and mix well, season with salt and pepper
12 skewers soaked in water for a couple of hours
Method
Skewer the chicken and vegetables onto the skewers and them place into the fridge for a couple of hours until ready to Bbq
For cooking the kebabs, take out the fridge 20 minutes before cooking,
Then sear off on the grill or bbq,
You will need to cook on the bbq for 6 minutes on eash side, season well with salt and pepper
As always, ensure the chicken is cooked through and piping hot and allow the meat to rest for 3-4 minutes before serving
Garlic sauce
100mls crème fraiche
2 table spoons mayonnaise
1 clove garlic
½ lemon juiced
1tbs cracker black pepper
Salt to taste
Tomato Salad
1 punnet cherry tomatoes – chopped
1 red onions sliced
10 mint leaves chopped
1 lime juiced
2 table spoons extra virgin olive oil
Salt and pepper
