Easter Chocolate Fudge Traybake Chocolate Cale Ingredients:? 250g dark Chocolate? 250g butter? 125ml of boiling water? 1 tsp instant coffee? 200g plain flour? 50g Cocoa powder? 1/2 tsp bread soda? 1 1/2 tsp baking powder? 250g Caster Sugar? 250g light brown sugar? 100ml Buttermilk? 4 eggs Fudge Icing ingredients:? 300g dark chocolate (you can use milk chocolate if you prefer)? 150g butter? 100g icing sugar? 20g cocoa powder Method:? preheat your oven to 160 degrees Celsius.? In a microwaveable bowl melt together the dark chocolate and butter.? In a measuring jug pour the instant coffee into the boiling water and mix, add this to the melted chocolate and butter mix and stir until smooth.? In a separate large bowl combine all your dry ingredients, flour, cocoa powder, bread soda, baking powder, caster sugar and light brown sugar.? Mix the eggs with the buttermilk and add to the dry mix along with the chocolate mix and combine.? Pour the cake batter into a lined rectangular cake tin (13”x9”).? Bake for 40-50 minutes.? Once baked allow to cool for 15 minutes in the tin and then remove from tin to cool fully.? To make the fudge icing, melt together the chocolate and butter over a bain marie or in the microwave.? Once melted sift in the icing sugar and cocoa powder, use an electric mixer and mix until smooth, if the icing is to thick add a drop of milk.? When the cake is complete cooled spread the fudge icing over the top with a palette knife, add some sprinkles and chopped mini eggs or your favourite Easter chocolates to decorate.? Cut into squares and ENJOY!!
