Ingredients:
(Serves 2, Three skewers per person)
½ aubergine
2 red onions, peeled
100g cherry tomatoes
2 x Lidl Irish Angus Quarter Pounders
Oil
Salt & pepper
6 x BBQ skewers
1 green apple, coarsely grated
1 carrot, grated
100g radish, thinly sliced
1 tbsp fresh lemon juice
1 tsp honey
Method:
1. Heat a dry grill pan or turn your oven grill on to the highest temperature.
2. Cut the aubergine and red onions into bite sized pieces. Place in a large mixing bowl with the tomatoes. Add ½ tbsp oil with some salt and pepper and mix together.
3. Cut the quarter pounders into 8 pieces.
4. Build the skewers by adding a mix of quarter pounders and vegetables to each skewer until all 6 are complete.
5. Place directly onto the grill pan or into the grill oven on a baking tray. Cook for 8-10 minutes or until cooked through to your preference. Turn the skewers half way through to ensure cooked on both sides.
6. For the slaw: mix the apple, carrot and radish together with the lemon, honey, 1 tbsp of oil and some salt and pepper until well combined.
7. Serve the skewers with the slaw
