Turkey Curry Pie
Chef: Mindi Keane from Mama Nagi's
Ingredients
2 tbsp Olive / Rapeseed Oil
Leftover Christmas Turkey.
1 Medium Onion, finely sliced chopped
3-4 garlic cloves
Thumb size ginger peeled and diced
2 red chillies
1 tsp Garam masala powder
½ tsp Turmeric powder
1tsp salt
2 green cardamom pods
Coconut cream/ milk
2 tbsp Fresh coriander, to garnish
*Add any other left-over ingredients for extra taste*
*Shop Bought Puff pastry for quick easy recipe*
Method:
1. Make the filling. Heat 1 1/2 tbsp. oil in a heavy pan. when hot
2. Add the sliced onions, and cook till golden brown, add garlic, ginger, green chilli & coriander stalks Turn the heat to medium and cook until mixture is soft and lightly browned.
3. Add, turmeric, garam masala and salt to the onion mixture. Cook spices for a few seconds.
4. Add coconut cream and cook for 5 mins, Let the sauce cook gently but do not allow it to become too dry.
5. Add turkey pieces into the sauce, making sure to cover all pieces with the sauce.
6. Set aside while make puff pastry (use ready-made pastry to save time)
7. Assemble the pot pie. Preheat the oven to 400 degrees F.
8. Roll out the dough to 1/4-inch thickness and a few inches larger than your pie pan. Gently fold the dough in half and in one movement and lift it off the rolling surface and into the pan. Unfold the dough and gently ease it into the over dish. Don’t stretch the dough down into the pan or when it heats up in the oven, it will bounce back and shrink.
9. Repeat with the other disc of pie dough. Fold and set aside.
10. Scoop the turkey mixture into the pie pan, mounding in the middle if needed. Top with the reserved disc of rolled out pie dough. Crimp the edge with the tines of a fork or flute the edge by pinching your knuckle into the middle of the index and middle finger of your opposite hand and repeat along the edges of the crust.
11. Cut 3 to 5 vents in the top of the pie. Whisk 1 egg and brush on the top of the pie dough. Bake for 45-50 minutes.
12. Enjoy with fresh green veg!
