Simon's Sticky Baked Buffalo Wings, Blue Cheese Dip and Potato Wedges

Simon's Sticky Baked Buffalo Wings,  Blue Cheese Dip and Potato Wedges
(serves 4)
 
Ingredients:
For the wings:
1kg Chicken Wings (about 14-20 wings)
1tbsp Sesame Oil
1tbsp Soy Sauce
1tbsp Fresh Lime Juice
 
For the sauce:
1tbsp Hoisin Sauce
3tbsp Organic Honey
1tbsp Soy Sauce
150ml Guinness
2tsp Sesame Oil
1 clove Garlic, crushed
 
For the blue cheese dressing:
3tbsp Buttermilk
150g Blue Cheese
2tsp Mayonnaise
3tbsp Sour Cream
2tsp White Wine Vinegar
1 Clove Garlic, crushed
1/4tsp Sugar
 
For the potato wedges:
1kg Baby Potatoes
1tbsp Paprika
1tbsp Garlic Granules
1tbsp Onion Salt
Salt & Pepper
2tbsp Olive Oil
 
 
Method:
1.  In a resealable food bag, pop the wings in and add the seasame oil, soy sauce and lime juice.  Seal the bag and mix the wings around, making sure they        each get a coating of the marinade.  Place into the fridge for 3 hours so the wings can marinade.
 
2.  After the 3 hours, preheat your oven to 220 degrees celcius.  Spread the wings on a baking tray and cook for around 20 minutes.
 
3.  While the wings are in the oven, make the sauce.  In a small saucepan, on a medium heat, add the hoisin sauce, honey, soy sauce, guinness, sesame oil         and garlic.
 
4.  Whisk together until smooth.  Bring to a simmer and cook until the mixture has thickened, this will take about 5 minutes.
 
5.  Remove the wings from the oven and brush them with the sauce, making sure to toss them well so they all get a coating
 
6.  Pop them back on the tray and cook for a further 5 minutes until they are glazed and cooked through
 
7.  For the blue cheese dip, in a large bowl, crumble the blue cheese into the milk.  Use the back of a fork to mash the cheese into the buttermilk and mix           through
 
8.  Add in the mayo, the sour cream, vinegar, crushed garlic and sugar and mix until well blended together.  Taste and then add salt and pepper if needed.          Cover and refrigerate until required.
 
9.  For the potatoes, cook the potatoes as normal in a pan of simmering salted water for about 15 minutes.  Leave them aside to cool
 
10.  When cool, cut them in half and lay them on a baking tray, spray with a little olive oil and then sprinkle the onion salt, aprika, garlic granules over them.
 
11.  Season with a little salt and pepper and cook in the oven at 200 degrees for 30 minutes until golden.
 
12.  To serve, pop the wings into a big bowl and serve with the blue cheese dip and potato wedges.
