APPLE & OAT CINNAMON SQUARES
(Makes 12)
INGREDIENTS
• 150g apple, cored and roughly cubed
• 150g oats
• 30g nuts (walnuts, pecans, almonds)
• 2 tbsp desiccated coconut
• 1 tsp baking soda
• 1 tsp ground cinnamon
• 100g carrot, grated
• 200g vanilla yoghurt
• 1 tbsp nuts (flaked almonds, pecans, walnuts)
METHOD
1. Preheat the oven to 200°C/180°C fan/400°F and line a square baking tin with parchment.
2. To make the stewed apple: place the cubed apple into a saucepan and cover with water. Place over a medium heat and bring to the boil. Reduce the heat to a simmer and allow to cook for 5 minutes. Remove from the heat and allow to cool.
3. Place all the dry ingredients in a large mixing bowl.
4. Add the stewed apple, carrot and yoghurt. Mix together until well combined.
5. Place the mixture into the prepared tin and evenly spread out.
6. Sprinkle the nuts over the top and bake for 20 minutes.
7. Remove from the tin and allow to cool on a wire rack.
8. Store in an airtight container and the squares will keep fresh for 3 days.
