JOE’S BEEF STIR-FRY
Ingredients:
60ml approx. of water
3 tbsp. brown sugar
3 tbsp. oyster sauce
1/2 tsp. dried chili flakes
400g of stir-fry beef (ask your butcher)
1 1/2 tbsp. cornflour
3 tbsp. sesame oil, divided
200g broccoli florets
200g red pepper sliced
1 tbsp. minced peeled fresh ginger
Salt and pepper for seasoning
Method:
1. Stir first four ingredients in small bowl until sugar dissolves. Set sauce aside.
2. Place beef in large bowl; sprinkle with salt and pepper. Add cornflour and toss to coat.
3. Heat some of the sesame oil in large pan or wok over high heat.
4. Add beef mixture and stir-fry for three minutes.
5. Transfer beef mixture to medium bowl.
6. Heat remaining sesame oil in same pan. Add broccoli, peppers, and ginger. Toss to coat; sprinkle with salt and pepper. Add sauce.
7. Cover, reduce heat to medium-high, and cook until vegetables are just tender - about five minutes. Add beef back in.
8. Toss until sauce coats beef, about one minute.
9. Serve with rice.
