Ingredients:
200g Plain Flour
140g caster sugar (plus extra to dust)
1tsp breads soda
200g Butter (melted)
100g Natural Yoghurt
2 eggs
1 tsp vanilla extract
Raspberry jam, Nutella or Lemon Curd
Method:
1. Preheat over to 180 degrees C.
2. Place flour, sugar and bread soda on a bowl and combine
3. In a separate bowl melt butter (in microwave or in a bain Marie), when butter is melted add in all remaining ingredients, natural yoghurt, eggs and vanilla extract, combine.
4. Pour the wet ingredient mix on top of the dry mix and fold together.
5. Greece a mini muffin tray with greasing spray or melted butter.
6. Divide the batter among a 24 cup mini muffin/cupcake tray.
7. Bake in the oven for 8-10 minutes until golden brown.
8. When slightly cooled, toss the donut bites in caste sugar to coat the outside of each one.
9. Optional: using a skewer make a small hole in the bottom of each bite, pipe a filling of your choice into each dount bite. We love filling ours with raspberry jam, Nutella or Lemon Curd.
