(Serves 2-4)
Ingredients:
100g Chorizo, sliced and skin removed
1 onion, chopped
1 garlic clove, finely chopped
1 tin of chopped tomatoes (400g)
1 sprig of rosemary, chopped
1 tin of cannellini beans (400g)
100ml chicken or vegetable stock
Optional: A little manchego OR parmesan cheese, grated
A glug of olive or rapeseed oil
Method:
1. Pour some oil into a sauce pan and add the onion with a pinch of salt
2. Sweat gently until softened then add the garlic & rosemary and chorizo
3. When the chorizo is browned, add the stock, the tin of tomatoes and the tin of beans.
4. Simmer for 30-40 mins, making sure it doesn't dry out. Add a little water if necessary and stir regularly.
5. Top with the grated manchego or parmesan cheese and serve with crusty bread.
