Smoked sea salt truffles
Makes 50 truffles
Ingredients
350ml double cream
100g caster sugar
300g dark chocolate
50g sifted cocoa powder for rolling
1 level tsp smoked sea salt
Method
Simmer the cream and sugar for one minute in a medium sized saucepan.
Chop the chocolate into small pieces.
Pour the cream onto the chocolate and whisk well to form a glossy chocolate ganache.
Gently stir in the sea salt. Cool the ganache and refrigerate for two hours.
Roll the truffles into balls around 1.5-2cm in diameter and dust them in sifted cocoa powder.
These truffles will keep for around a week.
