RECIPE: Joe's Boiled Boxty
Ingredients
3lb Potatoes
2lbs of Flour (and extra for dusting)
½ tsp Baking Powder
Pinch of Salt
Some milk to Bind
Method:
Peel Potatoes and cook half of them in salted water, when cooked place through a ricer or mash with a masher, seasoned with some butter, let cool
Grate remaining potatoes and mix with the mash potatoes
Add in the flour and baking powder and the pinch of salt
Bring together with a drop of milk, just enough to bind the mixture
Place on a floured surface and roll out to ½ inch thick and using a cutter or a cup cut into moulds otherwise known as Hurley's
Place a pot of water onto the stove with two crossed metal spoons placed at the base of the saucepan (this will prevent the boxty sticking to the surface), add a pinch of salt and bring to the boil and turn down to a simmer.
Pop in your Hurley's, after 5 minutes they will rise to the top and cook for a further 30 minutes, remove and let cool.
When cold, slice and panfry in some lovely Irish butter.
Boxty is lovely on its own or with fried lambs liver, or with grilled Irish bacon or even with smoked salmon
