Chicken and Prawn Paprika Noodles
It might sound like a strange mix having prawns and chicken in the smae dish but trust me, it works. This is one of the easiest meals when youre in a rush to refuel after a workout.
Ingredients:
1/2 tbsp coconut oil
1 X 120g Skinless Chicken breast fillet, sliced into 1cm strips
2 sping onions, finely sliced
1 clove garlic, finely chopped
4 cherry tomatoes, halved
4 midget trees ( tender -stem broccoli), any bigger stalks sliced in half lenghtways
6 raw king prawns, peeled
2 tsp sweet smoked paprika
250g ' straight to work' egg noddles
juice of 1 lime
1 red chillii, de seeded and sliced - optional
METHOD:
- Melt the coconut oil in a large frying pan over a high heat.
- Add the chicken and stir fry for 2 minutes.
- Chuck in the spring onions, garlic, cherry tomatoes, midget trees and prawns.
- Stir Fry the whole lot together over a high heat for about 3 minutes - don't chicken out and reduce the heat.
- Sprinkle in the smoked paprika and toss to coat the ingredients in the pan.
- Add the noddles, breaking up the clumps with your fingers as you drop them in.
- Pour in about 2 tablespoons of water, which will steam up and help cooke through the noodles and the chicken.
- Check bu slicing into one of the larger pieces to make sure the meat is white all the way through, with no raw pink bits left.
- When you are sure the chicken is fully cooked, remove the pan from the heat and squeeze in the lime juice.
- Plate up the noodles and top with red chilli, if using.
