Tiramisu is a well known classic Italian dessert and this morning (07.12.2015) we added a festive twist to it. Kristan Burness from the Unicorn Restaurant in Dublin joined us.
Ingredients:
500g mascarpone cheese
4 egg yolks
150g castor sugar
300ml strong espresso coffee cooled
100ml amaretto
100 g dark chocolate
500g savoiardi biscuits
100g chopped toasted hazelnuts
Optional garnish
Icing sugar
Coco powder or grated chocolate
Holly and red currants
Method:
Whisk egg yolks and sugar to pale
Add to mascarpone place in piping bag
In a cake tin or individual glasses
Layer mascarpone cream on bottom
Dip biscuits in coffee and layer on top of mascarpone
Add a splash of amaretto and scatter hazelnuts and chocolate in between each layer
Add about 3 layers
Then pipe the remaining mascarpone cream in to little peaks
Place in the fridge for 4 hours to set
Then Garnish with additional hazelnut chocolate shavings coco powder and icing sugar
