BlackBerry & Beet Bulker
Due to the mild weather we’re getting at the moment; there’s still lots of wild edible berries available on the country’s bushes and roadsides, so roll up your sleeves and get picking because it’s definitely worth the effort. If you’re under time pressure; go can also shop local and pick up some ‘berry’ good value deals in the likes of Lidl or Supervalu.
Benefits of Blackberries?
Blackberries are rich in bio-flavonoids and Vitamin C (100 g of berries contain 23 mg or 35% of RDA), which is a powerful natural antioxidant and are so simple to incorporate into your daily diet. Other nutritional benefits include a very low sodium count and having only 62 calories to a cup. The dark colour ensures blackberries have one of the highest antioxidant levels of all fruits; which is great at fighting the aging process and keeping the wrinkles at bay!
Recipe:
· 20 blackberries
· 1 small beet-sliced and diced
· ¼ cup of mango
· Handful of greens
· ½ tablespoon of coconut oil
· 4 ice cubes
· 1 pint of coconut milk
· Dash of cinnamon
· 1 scoop of vanilla protein (optional of extra protein)
Method:
· Slice the mango and beet into your blender or food processor
· Add the blackberries and ice cubes.
· With the blades whirring, pour in coconut milk to make the consistency you like.
· Add in your greens and protein. Whizz until smooth.
· Sprinkle on the cinnamon & garnish with basil.
· Enjoy!
