Prawn Brochettes

INGREDIENTS
• 12 Prawns (Size 20/30)
• Oil for cooking
• 28g Butter
• 10g Garlic Purre
• Flat Parsley
• 1 Lemon
• 4 Bamboo Sticks
• 150g Fine beans
• 15g Flaked almonds
• 28g Diced Chorizo
• 8g Crisp Roast Onion
• Ev Olive oil
• 100g Mayonnaise
• Curry Powder
• Sriracha
METHOD
1. Peel the prawns but leave the head and tail on. Skewer 3 prawns on each stick.
2. Heat a medium pot with a lid and a non stick frying pan at the same time.
3. When the pan smokes, add a splash of oil followed by the prawns. Cook on each side for 1 minute.
4. Then add the butter, followed by the garlic. Finish with the parsley and a squeeze of lemon juice.
5. Whilst cooking the prawns. Add a covering of water in to the bottom of the pot.
6. Pour the green bean ingredients into the pot mixing every 30 seconds or so. They will cook in 3 minutes. Mix the mayonnaise ingredients
7. To plate, spoon some beans In the middle of the plate, place some prawn brochettes on top. Drizzle with mayo.
