BBQ Swordfish with Grilled Vegetables

Burrata and tomato Bruschetta
- Chop the tomatoes and add the salt, Let e marinade for 20 minutes,
- Add the sherry vinegar, Oil and Bag.
- Grill the bread on the BBQ, don't bur it. Rub Some olive oil on the Bread when its ready
- Place half of the Burrata on each dice of bread, Crush it and spread it out..
- Spoon the tomato mix and top and serve, yum.
BBQ Swordfish with Grilled Vegetables
- 2 pieces of Swordfish 140g each
- Red onion, Courgette, Aubergine, Peppers
- Chop the Vegetables In even sized Pieces and toss with Olive oil and salt
- Grill the vegetables on the BBQ, give them a nice charred colour
- At the same time oil the Swordfish steaks and grill on each side for 3 minutes
- Remove the vegetables and toss in a bowl with the Balsamic and a little oil.
- Place the veg in the Middle of the plate and Place a swordfish steak on top
- Serve with lemon and Pour a little Soy sauce on top
