Ingredients:
4 tbsp Cooking Oil
1 kg chicken thighs on the bone
pinch of salt
1 pinch of black pepper
500gm spiced Paste
3 Cloves Garlic, thinly sliced
1 lemongrass ( bruised)
Handful of Thai basil
5 Lime Leaves, centre stem removed & thinly sliced
Water 1/2 cup
1 bunches of thinly sliced green bean
tbsp 2 Fish Sauce
1/2 tbsp Brown sugar or honey
1 onion thinly sliced
Spiced paste:
3 shallots
4 cloves garlic
3 red chilli
2 lemongrass
Thumb size ginger
Thumb size galangal
Pinch of salt and Pepper
Method:
1. Heat a non stick deep pan or large pan over a high heat. Add 1tbsp oil and wait until smoky hot.
2. Add the chicken season with a pinch of salt and pepper. Stir fry for 1 to 2 minutes
until the chicken are seared all over.
3. Add in remaining oil then stir in spiced paste & onion Constantly
stir on high heat for about 5 minutes.
4. Add green beans and kaffir lime leaves and stir fry until the green beans are
covered with the sauce evenly. Now, add ¼ cup of water, fish sauce and
sugar. Stir fry for 5 to 10 minutes or until chicken are fully cooked. Make sure green beans are nice & crunchy. Add a
tbsp water at a time if the sauce is getting too thick or burning.
5.Add Thai basil and stir fry all together, about 1 minute.
Remove from heat, and it’s ready to serve!
Serve with some warm cooked Jasmine rice and enjoy
