In a frying pan, heat the oil and fry the onion, garlic and mince for 3-4 minutes until browned. Add the seasonings and stir through the black beans.
Add the passata sauce (or homemade tomato sauce) to a seperate and season with salt, pepper and add some chilli flakes to increase the heat to your preference. Let simmer on lower heat for 5-10 minutes to thicken and develop the flavor.
Build the enchiladas: Add the mince and cheese to the wrap, fold and line a baking tray with 4-5 packed wraps. Top with the spicy tomato sauce and cheese on top. Bake in the oven at 200oC for 6-8 minutes to melt the cheese. Serve with some sliced jalapenos and parsley on top.
