Broccoli & Chicken Lemon Pasta

Broccoli & Chicken Lemon Pasta

 

Ingredients

?

·         2-4 Chicken Breasts, slivers

·         1 lemon, juice and rind

·         2 tbls olive oil

·         350g Spaghetti

·         Salt

·         1 tin(30g) anchovies

·         3 garlic cloves, crushed

·         1 red chilli, chopped

·         1 bunch parsley, stalks and leaves, chopped

·         200-400g Tender-stem broccoli

·         50g flaked almonds, toasted

·         50ml Cream or Crème fraiche, optional

 

Method 

 

 

1.Firstly make sure you slice your chicken into thin slivers. Now pop it in a bowl with the juice of the lemon and 2 tablespoons of olive oil. This can be left to marinade for up to 12 hours.
2.Start to get your spaghetti cooking according to the packets instructions. Be sure to salt your water.
3.Place a pan over a medium heat and start to cook you tin of anchovies, oil and all.
4.Break them up a bit and now add in the garlic, chilli and chopped parsley stalks. Let that fry away over the medium heat.
5.Now add your chicken to the pan, if using lots of chicken only do half and then the next half two minutes after.
6.Once your spaghetti is a minute from being cooked, drop the broccoli into the boiling water to cook.
7.Drain all the spaghetti and broccoli, keeping a little pasta water.
8.Add everything into the pan, including the chopped parsley leaves and toss around. If you had a little cream or crème fraiche you could pop a dollop in. 
9.Serve with toasted flaked almonds and lots of black pepper.
