Peel, chop and steam ( or boil ) the sweet potatoes. Drain and mash.
Drain the chickpeas and peel. De-seed and finely dice the red pepper.
Preheat the oven to 180?. In a food processor combine all the ingredients - sausage meat, feta, chickpeas, sweet potato, red pepper and aromatics.
Unroll the pastry and cut in half lengthways. (If you prefer a thinner pastry roll out a little.)
Spread the mixture down lengthways, spoon the relish on top. Roll over (always have the seal at the bottom). Any leftover mixture can be rolled into little balls and baked as nibbles.
Spoon 1 tbsp oil on the tray and warm. Glaze with egg wash, sprinkle with sea salt, cracked black pepper, fresh thyme and sesame seeds. Place on the tray and bake for 20 minutes.
