Steamed Atlantic Hake with Ginger, Coriander, Spring Onion and Soy, On a bed of Stir Fried Asian Greens.
1. Prepare vegetables by slicing ginger & scallions into long thin pieces. Roughly chop the coriander.
2. Start by heating 2 tablespoons of oil in a pan. Add sliced ginger & fry for 1 minute. Then add in scallions and cook for about 30 seconds to 1 minute.
3. In a bowl, combine soy sauce, salt & water & mix well. Then add it to the pan with ginger & scallions.
4. To create a homemade steamer fill your wok with 1 inch of water, let it boil.
5. Then place an empty tuna tin into bottom of wok & put a plate with fish standing on it so it’s not touching the water. Cover with lid & simmer for 8 mins.
6. Remove the fish from wok & place on serving dish. Spoon over soy sauce mix and sprinkle with coriander.
7. Heat oil in wok and stir fry Asian greens such as Pak Choi, adding soy sauce and seasoning as desired.
