The lovely Lina Gautam was cooking Pilao Rice with dried fruits on the show this evening. A lovely healthy dish for January!
Ingredients
• 1 tbsp vegetable oil • ½ tsp fennel seeds • 2 bay leaves, 1 cm cinamon stick, 4-5 cardimon pods • 10-12 cashew nuts halved • 4-5 dates cut into thin slices • Handful of chopped coconuts • 1 red onion finly chopped • 1 carrot peeled and jullian cut • 100g defrosted green peas • 1 tsp finely chopped fresh ginger • 100 g rice washed and soak for 5 mins • ¼ tsp salt • Small knob of butter
Method
• Heat oil in a pot, fry fennel seeds for 2 seconds and add bay leaves, cinamon , cardimon alog with dry fruits. Fry for 30 sec ( dont burn it). • Add onion and ginger with salt and saute it. • Add peas and carrot, cook for a minute • Add washed and drained rice with butter • Add 200ml hot water, cover and cook in low to medium heat for about 6-8 minutes. • Turn the heat of once all water evaporates and rice is cooked. • Serve hot with your favourite relish or chutney.
