INGREDIENTS
2 medium onions
2 cloves of garlic
2 tablespoons oil
1 x 680g jar of passata
2 x 400g tins of borlotti beans or mixed beans
3 tablespoons tamari/soy sauce
3 tablespoons apple cider vinegar
3 tablespoons honey/maple syrup/liquid sweetener
2 teaspoons salt
½ teaspoon freshly ground black pepper
2 teaspoons ground cumin
½ teaspoon chili powder
2 bay leaves (optional)
INSTRUCTIONS
Peel and finely chop the onions and garlic.
Heat the oil (or a splash of water) in a large pan over a medium heat and add the onions and garlic. Cook for 5-10 minutes, stirring, until the onions are translucent.
Add the passata and simmer for a few minutes to release the sweetness of the onions.
Add the beans, tamari/soy sauces, apple cider vinegar, honey/maple syrup/ liquid sweetener, salt, black pepper, cumin, chili powder and bay leaves (if using) and continue to simmer for 10 minutes more. Finally, taste and see if it needs more seasoning.
Serve on toast or freshly crusty bread.
