For the Sweet & sour sauce
Ingredients:
1 part water
1 part pineapple juice
¾ part brown sugar
1/3 part white distilled vinegar
¼ part ketchup
1 tbsp soy sauce
1 tbsp corn starch
Method:
Place all ingredients bar corn starch into a pot, and bring to simmer. Add a little water to the corn starch, and whisk into the above sauce.
For the stir-fry
Ingredients:
1 pineapple (cut in half, remove flesh & leave to one side)
¼ of a red onion
½ red pepper
½ yellow pepper
1 spring onion
½ courgette
Cut all vegetables julienne
70g tender stem broccoli
10oz fillet steak cut into strips
1 tbsp finely chopped ginger
¼ tsp finely chopped garlic
Chopped coriander to serve
Method:
Preheat pan with a tbsp rapeseed oil
Add your seasoned steak to pan & garlic
Add all julienne vegetables & tenderstem broccoli
Add ginger
Add half of pineapple flesh
Cook for two mins
Add your sweet & sour sauce
Decant into pineapple halves and serve sprinkled with chopped coriander
Accompany with boiled rice
